apple strudel

1 packet filo pastry

65g fresh breadcrumbs

lkg apples

100g soft brown sugar

165g sultanas optional

65g chopped nuts optional

1 tsp ground cinnamon

75g butter melted

3 tsp icing sugar

Unroll the filo pastry and brush each sheet with melted butter.

Lay out layer upon layer to make a large oblong to fit your largest baking tray or the cold shelf.

Sprinkle the breadcrumbs over the pastry.

Peel core and thinly slice the apples.

Mix together with the sugar sultanas and nuts (if using) and cinnamon.

Spoon onto the pastry sheet leaving a good 150mm border all round.

Fold in the short ends and carefully roll the strudel up so that the join is at the bottom.

Brush with any remaining butter.

Bake on the bottom set of runners in the roasting ovenfor 25 to 30 minutes until brown and crisp and the apples are cooked.

Sprinkle over the icing sugar and return to the second set of runners from the top of the roasting ovenfor 5 minutes until golden brown and glazed.

Home made strudels are easy to make now that filo pastry is so readily available. This recipe makes one large strudel but small individual strudels can easily be made.
