chocolate mousse cake

375g plain chocolate

1 level tsp instant coffee granules

175ml double cream

1 tbsp brandy

3 eggs

50g caster sugar

25g butter single cream to serve

Break 200g chocolate into small pieces.

Place in a small bowl with the instant coffee.

Melt in the simmering oven for 15 minutes then stir until it is dissolved.

Grease and baseline a 160mm square base measurement and 40mm deep rn with nonstick baking parchment.

Whisk eggs and sugar together until pale and thick.

In a separate bowl whip 100ml double cream until it just holds its shape then whisk in the brandy.

Fold a little egg mixture into the warm melted chocolate to give a soft mixture then fold the chocolate into the egg mixture followed by the whipped cream ensuring the ingredients are thoroughly mixed.

Pour into prepared tin and place m a small roasting tin.

Pour in enough her water to come at least halfway up the sides of the tin.
