mixed rice pilaff

350g long grain brown rice

150g wild rice

4 tbsp olive oil

salt and pepper

2 x 150g pine kernels toasted

Measure the washed rice into a saucepan add 1 1/2 times as much water and a good pinch of salt.

Bring to the boil on the boiling plate.

Cover with a lid and transfer to the simmering oven.

Cook for about 20 minutes until the rice is cooked and most of the water absorbed. Drain well.

Stir the oil into the drained warm rice.

Stir in the toasted pine kernels and adjust the seasoning

Wild rice is expensive but a small amount mixed with brown rice will add flavour and texture as well as enhance the appearance. Serve this pilaff with a casserole.

Serves 6
