100g plain flour

pinch salt

1 egg

300m1 milk

a little lard or dripping

Sieve the flour and salt into a basin.

Make a well in the centre and crack in the egg.

Beat the egg with a wooden spoon gradually drawing in the hour.

Slowly add the milk beating the batter well until a smooth creamy batter has been made.

Place a little lard or dripping into the base of 8 little bun tins.

Put the ovenshelf on the second set of runners from the top and put in the tray. Leave until the fat is melted and hazy hot.

Remove from the ovenand pour in the batter.

Return to the ovenand cook until risen and crisp and golden brown about 25 to 30 minutes.

yorkshire puddings need a good hot ovento make them puff up so to overcome the problem of slightly low heat at the end of the roast cooking time I cook my yorkshire puddings before the meat goes in the oven. Yes it does work! Cook the puddings in the usual way. When fully cooked remove them and put them to one side. When the joint is removed for resting before carving return the puddings to the roasting ovento heat through.

Makes 8 bun size puddings
