Espresso Pecan Pie

3 eggs, beaten

3/4 c. molasses

3/4 c. light corn syrup

1/2 c. (4 oz) brewed espresso, at room temperature

2 T. butter, melted

1/4 t. salt

1 t. vanilla

1 c. chopped pecans

4 T. flour

1 (8-in) unbaked pie shell

1 c. heavy cream whipped (optional)

Preheat oven to 375 . Combine the eggs, molasses, corn syrup,

espresso, melted butter, salt, and vanilla. Mis thoroughly. Combine

the pecans and flour, add to the liquid mixture, and pour into the

unbaked pie shell. Bake 40-50 minutes or until firm. Cool before

cutting. Garnish with whipped cream, if desired. Serves 8.
