275ml camargue red rice

1 tablespoon oil

10g butter

1 small red pepper deseeded and finely chopped

1 small red onion peeled and finely chopped

425ml boiling water

teaspoon salt

to serve:

2 spring onions trimmed and finely sliced

few sprigs watercress

Heat the oil and butter in the pan over a medium heat.

Turn it up to high and stir fry the chopped pepper and onion until they are softened and slightly blackened at the edges 6 to 7 minutes.

Turn the heat right down add the red rice to the pan and stir it around to get a good coating of oil.

Pour in the boiling water and salt and stir again.

When it reaches simmering point put the lid on and let it cook very gently for 40 minutes. After that dont remove the lid just turn the heat off and leave it for another 15 minutes to finish off.

Garnish the rice with the sliced spring onions and the watercress.

Serve with pork chops in maple barbecue sauce (qv).

Good with any barbecue dishes or with pork chops in maple barbecue sauce (qv).
