1 cup(s) brown rice flour
1/3 cup(s) soya flour
2 teaspoon baking powder
1/2 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1 cup(s) unprocessed rice bran
1/3 cup(s) brown sugar
1 cup(s) mashed banana
1/2 cup(s) sultanas
1 cup(s) soy milk
1/2 cup(s) chopped dried apricots
2 ozs dairy-free melted margarine
Prepare oven to 420F
prepare pans. Sift flours
b/pdr and spices
into bowl
add remaining ingredients; stir until just combined.
Spoon into pans and bake for about 35 mins or until cooked. Dust
with sifted icing sugar if desired. Makes 12 muffins.
