# 4 eggs
# 2 oz. (50g) mushrooms
sliced
# 2 tomatoes
peeled and sliced
# 1 cooked potato
diced
# 2 tablespoons cooked
green peas
# salt and pepper
# paprika
# 1 oz. (25g) butter
# 1 small onion
finely chopped # Melt the butter in a good sized frying pan
# Add the onion and cook until soft
then add potato
tomatoes
peas and mushrooms and sauté all well together
# Beat the eggs
add a little seasoning and pour over the contents of the pan
# cook until the egg has just set then turn upside down on a hot dish
# Sprinkle with paprika and serve with a side salad
