225g sweet shortcrust pastry
50g shelled hazelnuts
2 whole eggs and 2 egg yolks
7200m1 creme fraiche
150mI single cream
3 tbsp icing sugar
selection of seasonal fruits
redcurrant jelly to glaze
Use the pastry to line a 220mm loosebased flan tin.
Chill.
Put the hazelnuts on a baking tray and toast for 2 to 3 minutes at the top of the roasting oven.
Grind in a processor.
Whisk together the nuts eggs egg yolks creme fratche single cream and icing sugar.
Pour into the pastry case.
Bake on the floor of the roasting oven with the cold shelf on the second set of runners from the bottom.
Bake for about 30 minutes until the filling is just set and the pastry case golden brown.
Cool.
Remove the flan ring and stand the flan on a serving plate.
Decorate with seasonal fruit.
Stand the redcurrant jelly and 1 tablespoon water either on the aga or in the simmering oven.
When melted use to glaze the flan.
This fruit flan has a smooth creamy filling. Chill well before topping with fruit and glazing.
