Use a steamer if you have one or put the haggis in a pudding basin and cover with a lid of foil.

Stand the basin in a saucepan with a trivet.

Pour in about 50mm water and cover. Bring the pan to the boil transfer to the simmering plate and simmer for 20 minutes.

Transfer to the simmering oven for 2 hours until cooked and piping hot.

Serve with clapshot.
