light christmas pudding

175g unsalted butter at room temperature plus extra for greasing

grated rind of 2 oranges

175g aster sugar

3 large eggs

175g self raising flour

pinch of salt

1level tsp ground cinnamon

75g ready to eat dried figs roughly chopped

75g ready to eat dried dates roughly chopped

75g ready to eat dried apricots roughly chopped

sticky kumquat compote to serve (qv)

Grease and baseline a 1.4 litrepudding basin.

Place the butter and grated orange rind in a large bowl and using an electric hand mixer whisk the butter until smooth.

Gradually add the caster sugar and whisk until the mixture is pale and fluffy.

lightly whisk the eggs then gradually whisk into the butter mixture until smooth and fluffy.

Sift together the selfraising flour salt and cinnamon then carefully fold into the butter mixture with the dried fruit and nuts.

Spoon the mixture into the prepared pudding basin and smooth the top.

Cover the top of the basin with a circle of buttered greaseproof paper and foil.

Tie string securely around the top of the basin just under the lip.

Place in a large saucepan and pour in sufficient boiling water to come twothirds of the way up the sides of the basin.

Cover the saucepan with a tight fitting lid then bring back to the boil on the boiling plate.
