mulled wine

2 oranges thinly sliced

1 lemon thinly sliced

12 cloves bruised

1 tbsp allspice bruised

2 sticks cinnamon

10mm fresh ginger thinly sliced

2 bottles red wine

125g golden granulated syrup

Place the sliced oranges lemon and spices in a large pan (preferably stainless steel) with 500ml water.

Bring to the boil on the simmering plate then cover and transfer to the simmering oven for 1 to 1 1/2 hours for the flavours to infuse.

Add the wine and sweeten to taste.

This will depend on the sharpness that the citrus fruit imparts as well as your preference and the wine used.

Return the covered pan to the simmering oven for 30 minutes.

Check that the wine does not overheat (hot bath temperature is about right).

If preferred you can heat on the simmering plate.

Pour into a warm jug to serve (you may wish to strain the mulled wine frst).

A wide variety of wines can be used. Merlot shiraz and cabernet sauvignon wines are particularly suitable but dont choose the cheapest poorest quality wines that can lead to a hangover. If you wish up to 3 measures of brandy can be added at the same time as the wine. Bruise the spices by placing them in a strong polythene bag and crushing with a rolling pin. The tantalising fragrances of spices and citrus fruit make warrn mulled wine a great favounte. For the best results avoid using very cheap wines.
