100g fine oatmeal
pinch salt
pinch bicarbonate of soda
15g lard
150 ml water
oatmeal for rolling
Put the oatmeal salt and bicarbonate of soda in a mixing bowl.
Heat the lard and 150ml water in a small saucepan until the lard has melted.
Pour immediately onto the oatmeal mixture to make a firm dough.
Roll out the dough on a work surface sprinkled lightly with oatmeal to about 3mm thick.
Stamp out 75mm rounds or roll one large circle and cut triangles.
Lightly oil the clean simmering plate.
Place on the oatcakes about 6 at a time for 5 to 8 minutes until cooked through do not turn them over.
If you know your simmering plate is hot lift the lid for a couple of minutes before cooking.
The oatcakes will curl tip and become firm and dry when cooked.
Cool on a wire rack.
Oats are grown in scotland and therefore used a lot in scottish cookery. These oatcakes are simple to make and delicious with a range of scottish cheeses.
