parsnip soup
25g butter
1 large onion peeled and chopped
1 level tsp curry powder (medium strength)
450g parsnips peeled and diced
225g potatoes peeled and diced
1 litre cbicken or vegetable stock
salt and pepper
single cream for serving
Melt the butter in a large saucepan.
Toss the onion in the butter and cook over a gentle heat until soft.
Stir in the curry powder and cook for 1 to 2 minutes.
Add the diced parsnips and potatoes Stirring well then add the stock.
Bring to the boil.
Cover and transfer to the simmering ovenfor about 1 hour or until parsnips are soft.
Remove from the ovenand pass through a food processor or liquidiser.
Season to taste.
Heat through and serve with whirls of cream.
This is a thick winterwarming soup. Serve with home made bread for lunch or as a supper dish.
Serves 6.
