tomato sauce:
1 tbsp olive oil
1 onion finely chopped
1 clove garlic peeled and crushed
1/2tsp dried basil
1 tsp tomato puree
1 x 400g can chopped tomatoes drained
salt and pepper
Heat the oil in a saucepan stir in the chopped onion and the garlic and cook until softened.
Stir in the remaining ingredients bring to the boil cover and transfer to the simmering ovenfor half an hour.
Spread over the pizza bases leaving a 5mm border all round.
Finish with a selection of toppings.
Pizza base:
450g bread flour
1 tsp salt
1 tsp herbs
1 sachet of easy blend yeast
4 tbsp olive oil
300ml warm water approximately
Measure the flour into a mixing bowl and stir in the salt and yeast.
Stir in the olive oil and herbs.
Blend in enough warm water to make a manageable dough
Knead the dough on a floured worktop for at least 5 minutes until pliable.
Divide the dough into 2 and roll to 10inch rounds.
I like my pizzas to have a very crispy base so I brush the pizza with oil and turn it over onto a baking tray.
If you prefer you may just place them slightly floury on a baking tray.
Fold a teatowel on top of the simmering plate lid and stand the pizza base tray on top to rise for about 30 minutes.
Meanwhile prepare the topping.
