4 large baking potatoes
50 g (2 oz) butter
salt and freshly ground black pepper
Peel the potatoes and slice very thinly by hand or on a mandolin.
Melt the butter in a frying pan and fry the potato slices gently on the simmering plate for 2 to 3 minutes until limp but not brown. Cover the pan and allow to cool slightly then layer in 4 muffin tins seasoning between each layer and pressing down firmly.
Cook on the floor of the roasting oven for 35 to 40 minutes or until cooked through and brown and crisp on top.
Using a round bladed knife ease the potatoes out of the tins and serve.
A classic french dish this is a simple yet highly decorative way to serve potatoes.
