puree of sweet potatoes
450g orange fleshed sweet potatoes peeled and cut into large chunks
450g old floury potatoes peeled and cut into large chunks
salt and freshly ground black pepper
50g butter
3 level tbsp chopped fresh thyme (optional)
Place the sweet potatoes and potatoes in a large saucepan.
Cover with water and add salt.
Bring to a fast boil on the boiling plate for 2 minutes then drain off all but 10mm of the water and transfer to the simmering oven to cook in their steam for 20 to 30 minutes or until very tender.
Drain and dry well.
Mash the potatoes until smooth.
Beat in the butter season well and stir in the fresh thyme if wished.
Serve immediately.
To prepare ahead peel the sweet potatoes and potatoes cover with cold water and chill up to 8 hours ahead. To use complete the recipe. Be sure to peel the sweet potato deeply enough to expose the orange flesh or the resulting puree will be stringy.
If you have time boil both types of potato whole in their skrns and then peel. This will stop the potatoes absorbing water while they cook and give a lighter result. I(sweet potato isnt available try using butternut squash or even pumpkin but cook separately from the potato. The sweet potato gives this smooth puree an almost nutty flavour. Be as bold as you like with the black pepper.
