quesadillas
200g blue brie
1 small avocado
2 tomatoes
1 fresh red chilli
3 spring onions
4 flour tortillas
aga equipment:
wire shelf on third set of runners in roasting oven
Thinly slice the brie and remove the rinds if preferred.
Finely chop the avocado.
Seed and chop the tomates.
Seed and finely chop the chilli.
Trim and slice the spring onions.
Arrange the sliced cheese over the tortillas on baking sheets then cook for 5 minutes.
Scatter the avocado tomato chilli and onion over then cut the tortillas into four pizzalike wedges to serve.
A kind of Mexican pizza which can be as .spicy as you wish. I like to use a blue brie but you can choose your favourite cheese and add as much chilli as you like. Try replacing the avocado with sliced mango drizzled with fresh lime juice.
