roasted pepper salad
4 peppers of mixed colours
2 plump cloves garlic finely sliced
salt and freshly ground black pepper
3 tbsp fruity olive oil
1 tbsp sherry vinegar
1 tbsp freshly torn basil leaves

small roasting tin on second set of runners in roasting oven
Place the peppers in the roasting tin and roast for 20 to 30 minutes according to their size turning once.
Once the peppers are blackened all over cover them with a clean damp tea towel then leave them for 10 to 15 minutes to cool this helps to steam the skins free of the flesh. (I have never liked the concept of placing hot peppers in plastic bags to ease off the skins the damp tea towel method is much better.) Peel the peppers start at the flower end and just pull the papery skin off then pull out the core and seeds.
Rinse the peppers cut them into strips and place in a small serving dish.
Add the garlic seasoning oil and vinegar.
Stir well then leave to marinade for at least 1 hour.
Add any extra seasoning necessary and stir in the basil just before serving. Serve at room temperature if the peppers are too cold you will severely retard their sweet flavour.
