roasted red pepper salas

1 large red pepper

3 tbsp olive oil

2 tsp balsamic vinegar

salt and freshly ground black pepper

Roast the red pepper in a roasting tin on the top runners of the roasting ovenfor 25 to 30 minutes or until the skin is charred.

Leave to cool in a plastic bag then remove the skin core and seeds retaining the juice.

Cut into strips or dice then mix wth the oil and balsamic vinegar and season.

Keep the salsa covered in the fridge for up to 3 days.

Serves 6
