sausages with red wine bean sauce and garlic and olive crushed potatoes
8 large sausages of your favourite variety
salad leaves to garnish
potatoes:
500g new potatoes scrubbed and roughly chopped
3 tbsp fruity olive oil
salt and freshly ground black pepper
1 large clove garlic crushed
2 tomatoes seeded and roughly chopped
25g pitted black olives roughly chopped
sauce:
1 onion finely chopped
2 tbsp olive oil
1 clove garlic crushed
250m1 red wine
400g can flageolet beans drained and rinsed
3 tbsp tomato puree
salt and freshly ground black pepper
aga equipment:
small roasting tin on second set of runners in roasting oven
Only prick the sausages if they are made with synthetic skins most designer bangers are in natural skins which will not burst during cooking. Place them in the roasting tin and cook for 30 minutes in the roasting oven.
Just cover the potatoes with water in a saucepan and bring quickly to the boil then cook for 5 minutes on the simmering plate.
Drain off most of water then place the covered pan on the floor of simmering ovenfor 10 to 15 minutes until the potatoes are just tender.
Make the sauce while the sausages and potatoes are in the aga.
Cook the onion in the olive oil in a covered frying pan on the simmering plate for 3 to 4 minutes.
Add the garlic then the wine and cook quickly on the boiling plateuntil the wine has reduced slightly then stir in the beans and tomato pure.
Season the sauce to taste then place in the simmering ovenuntil required.
Drain the potatoes then heat them in the pan on the simmering plate for a few seconds to drive off any surplus water and to dry them completely.
Crush them lightly with a fork or a masher then add all the remaining ingredients.
Stir well and season to taste.
Serve the sausages with the potatoes with the red wine and bean sauce spooned over the bangers.
A small salad garnish is all that is needed to complete the meal.
There are some wonderful sausages available now which are a feast in themselves however you cook them. Crushed potatoes or garlic and olive oil mash are the perfect accompaniments.
