slow braised beef

3 tbsp olive oil or the anchovy oil

700g piece braising steak cut into small steaks

350g onion thickly sliced

25g can anchovy fillets in oil drained and chopped

2 level tbsp capers chopped

2 level tbsp chopped fresh parsley

1 level tbsp chopped fresh thyme plus extra sprigs to garnish

1 level tsp ready made english mustard

Heat the oil in a flameproof casserole on the simmering plate and brown the meat well a few pieces at a time.

When the last of the meat has been browned stir in 4 tbsp cold water to loosen any sediment from the bottom of the pan.

Return all the meat to the casserole

Add the onion anchovies capers herbs and mustard to the casserole.

Mix together untl thoroughly combined.

Crumple a sheet of greaseproof paper then wet it.

Open out and press down over the surface of the meat.

Cover the casserole tightly and if there is a steam vent in the lid plug it with. a paste of flour and water.

Cook on the floor of the simmering oven for 5 to 7 hours or until the beef is meltingly tender.

Check the casserole occasionally and add water if it looks dry.

Garnish with thyme and serve.

Capers now come in more than one form. Dont use the salted vanety for this recipe but opt for capers in vinegar. The anchovies in this dish melt away leaving a rich flavour with little gravy. This dish takes just 15 minutes to prepare and can be made ahead and reheated the next day (the aga provides the ideal slow cooking to create the meltingly tender beef). This is excellent served with buttery mashed potato
