400g canned apricots in natural juice
150ml apricot yogurt
225ml unsweetened orange juice
Place all the ingredients in a blender or food processor and blend for 1 minute or until smooth.
Serve well chilled.
This smoothie recipe uses canned apricots rather than fresh so it is particularly useful during winter when the variety of fresh fruits available can be limited. Some of the vitamin C is lost during the canning process but you gain in other ways canned apricots actually provide more betacarotene than fresh.
