stuffed chillies with chive noodles
2 large anaheim chillies halved and seeded
Filling:
6 spring onions trimmed and finely chopped
75g blue cheese such as blue dauvergne or mild stilton crumbled
8 tbsp fresh wholewheat breadcrumbs 25g pine nuts
2 tomatoes seeded and chopped
1 tbsp cream (optional)
salt and freshly ground black pepper
Noodles:
1 sheet thread egg noodles (from a 250g packet of dried noodles)
1 tbsp olive oil
salt and freshly ground black pepper
2 tbsp freshly snipped chives

Halve the chillies and carefully remove the seeds.
Try to keep the tops of the cores intact as they will help to hold the shape of the chillies during baking.
Mix all of the ingredients together for the filling pack it into the chillies and put them in a small baking tin.
Cook for 15 minutes in the roasting ovenuntil the chillies are tender and the topping has browned.
Soak the noodles in boiling water for 3 minutes then drain them thoroughly. Heat the oil in a pan add the noodles and toss them in the oil until hot then stir in a little salt and pepper with the chives.
Serve the roasted stuffed chillies on a bed of noodles on warmed plates.
Chilli mania is reaching the UK and there is now a Chilli Society as well as various hot events up and down the country. At West Dean Gardens near Chichester 60 to 70 varieties of chillies are grown every year in a display glasshouse and the plants are absolutely beautiful. Not all chillies are hot the Anaheim variety used here is only sllightly warmer than the regular green pepper and they are widely available in season in major supermarkets. If you grow hungarian wax chillies they can be stuffed in the same way.
