75g plain flour
140g finely grated fresh parmesan cheese
75g butter
salt and freshly ground black pepper
1/2 level tsp cayenne pepper
900g tomatoes preferably plum
4 level tbsp sundried tomato paste
15g fresh breadcrumbs
1 level tbsp chopped fresh thyme fresh thyme sprigs to garnish
In a food processor blend the plain flour 75g grated parmesan cheese butter 1/2 level tspn salt and the cayenne pepper until the mixture looks like rough breadcrumbs.
Set aside one third of the crumb mixture cover and refrigerate.
Press the remaining crumb mixture into the base of a 210mm square loose based flan tin using the back of a metal spoon to spread it out to the edges.
Chill for 10 minutes.
