turkey burgers
1 small onion finely chopped
450g minced turkey
50g fresh breadcrumbs or porridge oats grated rind of 1/2 a small lemon
2 tbsp chopped parsley
8 streaky bacon rashers rindless
salt and pepper
a little oil
If making by hand fry the onion in a little oil until soft then combine with the minced turkey meat breadcrumbs lemon rind parsley and salt and pepper to taste. Alternatively put the onion in the processor and chop it finely.
Add all the ingredients except the bacon and process them together.
Shape into eight burgers.
Cut each rasher in half lengthways and wrap two rashers round each burger in a cross formation.
Place the burgers on a baking tray and drizzle a little oil over them.
Put the tray of burgers on the floor of the roasting ovenfor 15 minutes then put the ovenshelf on the top set of runners in the roasting ovenand move the tray of burgers up for 10 to 15 minutes to give a crisp finish to the bacon.
Home made burgers are much nicer than anything bought in the shops. They are
quick and easy to make either by hand or in a processor. turkey meat is low in fat and healthy but it does need some flavouring. Cook these in the ovenand serve with home made ovenchips
