vanilla custard

600ml milk

1 vanilla pod split

4 egg yolks

250g caster sugar

15ml cornflour

Pour the milk into a saucepan add the vanilla pod and bring to just below boiling point on the simmering plate.

Cover and transfer to the simmering ovento infuse for 10 to 15 minutes or until well flavoured with vanilla.

Meanwhile in a large bowl whisk together the egg yolks sugar and cornflour until light and foamy.

Strain the flavoured milk onto the egg mixture whisking all the time.

Return to the saucepan and heat stirring on the simmering plate until thickened enough to coat the back of the spoon; do not boil or the custard will curdle.

Immediately remove from the heat and pour into a cold heatproof bowl.

Cover the surface with a piece of dampened greaseproof paper to prevent a skin forming and keep warm on the back of the aga until ready to serve.

Serves 6
