Thai Rendang

Ingredients:
1 kg beef tenderloin, cube
2 tbsp oil
2 onions, slice
2 cups water
2 bay leaves
2 kaffir lime leaves
5 sprigs basil leaves, chop finely
2 pieces dried tamarind skin
Spices (grind)
4 cloves garlic
8 shallots
2cm-piece ginger
2 stalks parsley root
1/2 tsp fennel (jintan manis)
1 tsp cumin (jintan putih)
1 tsp ground black pepper
15 cili padi
1 tsp chilli boh
Seasoning
1/2 tsp salt
1 tsp sugar or to taste
1 tsp beef stock granules
1 tsp fish sauce (nam pla)
Method:
DEEP-fry beef pieces in hot oil for 2 to 3 minutes. Drain and set aside. Heat oil; stir-fry onions and ground spices till
aromatic.
Add beef, water, bay leaves and tamarind skin. Simmer until beef turns tender and gravy thickens.
Add basil and kaffir lime leaves and seasoning. Cook till sauce is thick and beef is fully cooked and tender. Serve
with hot, plain rice.
