Light and Fluffy Pancakes

3 large eggs — separated

1 stick (1/2 cup) unsalted butter — softened

1 1/2 teaspoons double-acting baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup milk

1 cup all-purpose flour

1 tablespoon sugar

In a bowl whisk together the egg yolks, the softened butter, the baking

powder, the baking soda, the salt, the milk, the flour, and the sugar until

the mixture is smooth. In another bowl with an electric mixer beat the egg

whites until they just hold stiff peaks and fold them into the flour mixture

gently but thoroughly. Heat a griddle over moderately high heat until it is

hot enough to make drops of water scatter over its surface and brush it with

the melted butter. Working in batches, spoon enough of the batter onto the

griddle to form 3-inch rounds, cook the pancakes for 1 to 2 minutes on each

side, or until they are golden, and transfer them as they are cooked to a

heated platter. Serve with maple syrup and butter.
