6 skinless boneless chicken breast halves

3 tablespoons sesame oil

3 tablespoons vegetable oil

2 tablespoons minced shallots

1 teaspoon grated lemon zest

1 tablespoon lemon juice

1 tablespoon soy sauce

1 tablespoon hot water

1 cup crushed crisp wheat crackers — (such as Stoned

Wheat Thins)

1/2 cup grated Asiago cheese

1/4 cup chopped fresh basil

2 tablespoons chopped fresh Italian parsley

1/2 teaspoon fresh cracked black pepper

1/2 cup toasted pecan pieces

4 tablespoons unsalted butter — melted

1. Wash and pat dry the chicken breasts. Place them in a shallow nonreactive

pan. Combine sesame oil, vegetable oil, shallots, lemon zest, lemon juice,

soy sauce, and hot water and pour over chicken breasts. Set aside in the

refrigerator to marinate for 30 minutes or up to 2 hours.
