Tomato gazpacho

MAKES 4 SERVINGS

2 cups V-8 juice

1/4 cup minced red onion

1 cup chopped tomato

1/2 cup diced yellow bell pepper

1/2 cup peeled and diced cucumber

1 cup chopped scallions

1/3 cup chopped parsley

1/4 cup chopped fresh basil

1-1/2 teaspoons sugar

1 clove garlic, minced

2 tablespoons fresh lime juice

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional garnishes:

1/4 cup sour cream

Diced hard-boiled egg

Croutons

Combine V-8 juice, red onion, tomato, bell pepper, cucumber,

scallions,

parsley, basil, sugar, garlic, lime juice, vinegar, salt and pepper in

a

large bowl; stir to combine. Remove half the mixture and puree in a

blender

or food processor. Return pureed mixture to bowl and stir to combine.

Cover and refrigerate overnight for flavors to develop. Serve chilled

with a

dollop of sour cream and other garnishes, if desired.
