150g extra bitter chocolate (minimum 70% cocoa solids)
75g cocoa powder
250g caster sugar
500ml water
Chop the chocobte into very small pieces and add the cocoa powder.
Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for fifteen minus.
Whisk the syrup into the chocolate.
When it has all melted and the mixture is smooch leave to cool.
Turn in an ice cream machine.
Serves 4
