400ml coconut cream

120g white sugar

6 eggs

60g butter

Dissolve the sugar in the coconut cream over gentle heat in the top of a double boiler.

Beat the eggs well then pass through a fine nylon strainer onto the coconut milk and mix in evenly.

Cook over simmering water stirring slowly until the custard has thickened enough to coat the back of the spoon about 8 minutes.

Remove from the heat.

Melt the butter and pour into a 20cm round cake tin.

Brush the butter evenly over the base and sides then pour the excess into the custard and stir in evenly.

Pour custard into cake tin.

Place cake tin in a baking dish with enough warm water to come about halfway up side of pan.

Bake in the oven at 180
