2 crisp eating apples
1 banana
1 pineapple weighing about 750g
40g butter
1 onion weighing about 50g
40g flour
40g madras curry powder
1 1/2 tbspns dessicated coconut
1L chicken stock
1 bouquet gami

Wash and core the apples and cut into very fine slices.
Peel the banana and cut into rounds.
Remove the leaves from the pineapple; peel and core it and then cut the flesh into very fine slices.
Peel wash and chop the onion very finely.
Melt 25g butter in a shallow pan set over low heat. Add the onion and sweat until soft.
Put in the fruit and cook gently for 10 minutes.
Meanwhile lightly brown the flour in a hot oven. Sprinkle the browned flour over the mixture in the pan add the curry powder and coconut and aiix well with a spatula.
Pour in the chicken stock bring to the boil lower the heat and simmer gently for 1 hour skimming the surface as often as necessary.
Add the bouquet garni after 10 minutes cooking time. Season to taste with salt.
Pass the cooked sauce through a conical sieve into a bowl and dot the surface with the remaining butter to prevent a skin from forming.
If you have any it is much better to use grated fresh coconut than dessicated; it will give the sauce a rich creamy sophisticated flavour. You can use less or more curry powder according to your own personal taste.
