fennel and apple salad
2 medium sized roots fennel trimmed and thinly sliced
2 red skinned dessert apples cored and thinly sliced
2 tablespoons seedless raisins to garnish
Dressing
150ml soured cream
1 teaspoon cider vinegar
grated rind of 1/2 orange
1 tablespoon orange juice
pinch of sugar
salt
freshly ground black pepper
To make the dressing mix together the ingredients.
Taste and adjust the seasoning if necessary.
Toss together the fennel and apples and immediately toss them in the dressing so that the apples do not discolour.
Garnish the salad with the raisins.
Serves 4
