fried fish in a beer batter

110g plain flour

A pinch of salt

1 teaspoon dried powdered yeast

1 tablespoon oil

200 ml beer

1 egg white

4 fillets skinned white fish each weighing 140 9 (5 oz)

30g seasoned flour

Oil for deep frying

Sift the flour salt and yeast into a bowl.

Make a well in the centre and pour in 2 tablespoons of warm water; leave for a few minutes until foaming .

Mix into the flour with the oil and beer to make a smooth thick batter.

Leave to stand in a warm place for 30 to 40 minutes until frothy.

Whisk the egg white until it is stiff and fold into the batter.

Coat the fish in seasoned flour shaking off the excess.

Dip in batter coating the fillets completeiy and evenly.

Deep fry in a pan onethird full of oil heated to 375 degrees F 190 degrees C for about 4 minutes or until golden brown and crispy.

Drain thoroughly on kitchen paper and serve the fish immediately with chips lemon wedges and tartare sauce.
