455g whitebait thawed if necessary
About 140 ml milk
About 85g seasoned flour
Oil for deep frying
Salt for sprinkling
A lemon cut in wedges
Discard any damaged whitebait.
Dip in milk then roll in seasoned flour shaking off the excess.
Heat the oil to 375 degrees F 190 degrees C and fry the fish in several batches for 2 to 3 minutes until crisp and golden brown.
Drain the fish on kitchen paper and sprinkle with salt.
Keep warm until all the fish have
been fried.
Serve garnished with lemon wedges with a plate of buttered brown bread.
