gingered golden beet salad
1/2 cup fresh orange juice
1 tablespoon grated fresh ginger
1/2 tspn ground cinnamon
4 golen beats cooked peeled and shredded
2 zucchini shredded
1/2 cup coconut milk
2/3cup plain yogurt
fresh mint ties to garnish
In a small bowl combine orange juice ginger and cinnamon.
In a large bowl combine beets and zucchini.
Toss with juice mixture.
Let sit for about 2 hours.
Pour off excess liquid.
In a small bowl combine yogurt and coconut milk and toss with salad.
Garnish with mint.
