gooseberry fool
450g gooseberries topped and tailed
50g golden granulated sugar
the juice of 1/2 lemon
300ml double cream
Place the gooseberries sugar and lemon juice in a saucepan and bring slowly to the boil.
Cover and cook gently for 5 to 10 minutes until just tender then purse and allow to cool.
At this stage you can pass the mixture through a fine sieve if you want to get rid of the seeds: I prefer to keep them for a contrasting crunch.
Lightly whip the cream then gently fold in the purse.
Spoon into glasses or bowls.
Serve immediately or chill and serve after an hour or two.
This can also be made into a simple ice by freezing in individual rameldns for a couple of hours.
