1 small onion finely chopped
1 clove garlic crushed
salt pepper
2 anchovy fillets soaked drained and mashed
1 tablespoon capers
2 tablespoons chopped parsley
2 hard boiled eggs (optional) mashed
4 tablespoons olive oil
juice 1 lemon
Put the onion garlic crushed with salt anchovy fillets capers and parsley into a bowl.
Add the hard boiled eggs if used and the olive oil and lemon juice.
Stir well season highly with salt and pepper cover and refrigerate for 30 minutes before serving.
For a more traditional version the hardboiled eggs should be omitted.
Serve with hot or cold meat and poultry.
