3 medium heads of radicchio
sea salt and freshly ground black pepper
Olive oil and vinegar dressing (qv)
1 small bunch fresh marjoram parsley or basil
Preheat the grill.
Carefully peel open and separate the whole leaves of radicchio.
Place the leaves in a single layer on the grill.
Season and turn over immediately just to wilt not to blacken.
Place in an ovenproof dish and pour over the dressing.
Turn to coat the leaves add the herbs and bake in an oven heated to 180 C/350F/gas 4 for 15 minutes.
Serves 6
