haddock mousse
8 oz cooked smoked haddock
1 pt mayonnaise
4 pt double cream
1/2 oz gelatine dissolved in 3 tablespoons water
Dissolve gelatine in water.
Mix fish with some of the cream and blend well together
Add remaining cream and seasoning mix well.
Put in individual moulds dampened
This dish will freeze successfullyPrawn creams
1 oz butter
1 oz flour
1 pt milk
1 teaspoon celery salt
pinch white pepper
juice 1/2 a lemon
grated nutmeg
2 tablespoons grated Parmesan cheese
2 oz cooked prawns
Melt the butter and stir in the flour cook for 2 mins without browning.
Add milk and continue cooking stirring until mixture thickens.
Season with celery salt and pepper and stir in the grated cheese.
Add strained lemon juice and continue cooking until the cheese is melted.
Stir in the prawns saving a few for decoration.
Serve very hot in small portions with a sprinkling of nutmeg
