honey cream dressing
1/2 cup lowfat cottage cheese
1 tablespoon honey
1tablespoon fresh lime juice
2 tablespoons poppy seeds
In a blender puree cottage cheese until smooth.
Transfer to a small bowl and whisk it honey lime juice and poppy seeds. Refrigerate in an airtight container for up to 3 days.
In this dressing which is spectacular on fruit salads or as a dip for fresh strawberries cottage cheese imparts a lush undertone. For more richness and a denser texture you can substitute ricotta.
