lamb chops with vegetable kebabs
75g butter softened
1 teaspoon paprika
1 teaspoon tomato puree
1/4 teaspoon Worcestershire sauce
salt
freshly ground black pepper
4 loin of lamb chops
3 tablespoons vegetable oil
1 tablespoon red wine vinegar
4 small courgettes cut into 2cm slices
100g small button mushrooms
1 red or yellow pepper cored seeded and cut into 3cm squares
Beat together the butter paprika tomato puree Worcestershire sauce salt and pepper.
Use half of this to spread on both sides of the chops.
Shape the remainder into 8 pats and chill.
Mix together the oil and vinegar add plenty of salt and pepper and toss the courgettes mushrooms and green pepper in this dressing.
Drain the vegetables and thread them on to 4 small skewers.
Cook the chops under a preheated hot grill for 1 minute on each side.
Reduce the heat to moderately hot and place the kebabs under the grill.
Cook for 56 minutes turning the chops and skewers once and basting the kebabs with the remaining oil and vinegar.
Serve the chops each with 2 pats of paprika butter.
Serves 4
