15g dripping or white fat

1.1 kg middle neck of lamb chops

230 to 280g lambs kidneys cored and quartered

0.9 kg potatoes peeled and sliced

280g onions thinly sliced

Salt and freshly ground black pepper

430 to 570 ml good lamb stock

A little melted dripping or white fat

A 3.45 l deep ovenproof dish

Set the oven at Gas Mark 4 350 degrees F 180 degrees C.

Heat the fat in a frying pan and quickly but thoroughly brown the chops and kidney in batches.

In an ovenproof casserole layer up the meat with the sliced potatoes and onions starting and finishing with potatoes and seasoning each layer well.

Pour over the stock and brush the top layer of potatoes with the melted dripping.

Cover the dish and cook in the oven for 2 hours.

Remove the lid and turn the oveh up to Gas Mark 7 425 degrees F 220 degrees C for a further 30 minutes to brown the top.

Serves 6
