lemon tart

150g salted butter diced

225g plain flour

75g icing sugar sifted

1 whole egg plus 1yolk

filling

175g caster sugar

4 eggs

juice of 2 lemons

finely grated zest of 1 lemon#

150ml double cream icing sugar to sieve

For the pastry rub the bufter into the flour add the sugar then the egg and yolk.

Combine to a dough wrap in clingf ilm refrigerate for at least 30 minutes then roll out to line a 20cm flan ring.

Fill with foil and baking beans and bake blind for 20 minutes at 150C/350F/Gas Mark 4.

For the filling beat the sugar and eggs together add the lemon juice zest and cream and mix well. Pour into the partbaked flan case and bake at 160C/300F/Gas Mark 2 until just set which can take up anything up to 2 hours.

Allow to cool then just before serving sift the surface with icing sugar and either caramelise using a blowtorch or place under a pre heated grill for a couple of minutes until golden brown.
