The quick way to make lemonade is to slice the lemons roughly skin and all

Into a processor add a couple of glasses of water and some sugar men whiz it all up and strain.

Repeat the process a couple of times witj the debris then balance with extra water and sugar.

The oldfashioned method takes longer but tastes fabulous.

For either versionuse lemons that have not been treated with wax.

You could substitute an orange or two small limes for one lemon.

Makes about 850 ml

3 lemons

60g sugar Iumps

Mint leaves or borage to serve (optional)

Rub the lemons with the sugar until all the aromatic oils are drawn out and the sugar is saturated.

As each lump is used up drop into a Iarge bowl.

Slice the lemons thinly peel and all and add to the bowl.

Pour 1.5 pints of boiling water over fruit and sugar.

Cover and leave to steep for 12 hours.

Strain.

Serve well chilled with mint leaves or borage flowers floating on the top.

Makes about 850 ml
