Two quick ways to zip up mozarella. Make one or the other or serve both together as a traffic light first course or cheese course
The first Umozzarella elettrico” is based on a northern italian marinade for another bland cheese. The electric element Is the chilli.
Slice one or two balls of mozarella.
Mix llOml of olive oil with
1/2 tbsp each of crushed chilli and paprika and 2 tbsp of lemon juice.
Pour over the mozarella and leave to soak for at least half an hour but preferablytwo hours.
The second mozarella verde relies on a milder herby marinade.
Slice the mozzarelb as above. Mix 11Oml olive oil 30g finely chopped fresh parsley 10 large celery leaves and 5 large basil leaves finely chopped 12 cloves garlic chopped 2 tbsp lemon juice salt and pepper. Marinate as before.
