melon and shredded ham soup

chinese

600g chinese winter melon (or substitute cucumbers)

100g ham

5 cups water

2 teaspoons chicken stock powder

1 tablespoon finely shredded ginger

2 tablespoons finely shredded spring onion

11/2 tablespoons light soy sauce

Peel the melon and cut into thin slices and then into pieces about 4 cm square.

Shred the ham.

Bring the stock to the boil and add the shredded ginger and spring onion and the soy sauce. Simmer the soup until the melon is tender about 23 minutes.

Serve the soup hot.

Hint. Steamed slices of winter melon can be served as a vegetable. Dress with a little cooked crab meat moistened with chicken stock.
