400g calfs liver

4 tablespoons olive oil

1 onion chopped

150g mushrooms sliced

1OOg salami cut into thin strips

225g tomatoes skinned de seeded and quartered

150ml white wine

salt pepper dried basil

Wash the liver and pat dry with absorbent paper.

Cut into bite sized cubes.

Heat the oil in a pan add the onion and fry for 3 minutes.

Add the cubes of liver and fry on all sides for 3 minutes.

Add the mushrooms cook for a further 3 minutes then add the salami and tomatoes.

Pour over the white wine.

Season with salt pepper and basil.

Cook for 3 minutes more stirring.

Transfer to a hot dish and serve with spaghetti.
